    • 2 carrots, peeled and chopped
    • 2 tblsp. chopped fresh parsley
    • 1 can diced tomatoes with juice
    • 2-3 cloves garlic
    • 1/2 tsp. salt
    • 1/2 tsp. red pepper flakes
    • 1 tsp. dried oregano
    • Juice of 1 lemon
    • Fresh parsley, if desired, for garnish
