    A brazilian inspired, healthy dinner that kids and adults love. Made lighter with the addition of extra vegetables.

    Ingredients

    • 1 tablespoon coconut oil
    • 1 onion, chopped
    • 2 pieces of bacon, cut into strips
    • 1 stalk celery, chopped
    • 2 carrots, chopped
    • 1 zucchini, chopped
    • 2 cloves of garlic, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 can of black beans, drained
    • ½ cup chicken stock
    • salt and pepper to taste
    • juice of half a lime
    • several springs cilantro leaves, chopped
