    These grilled vegetable enchilada bowls are a fun and fresh take on classic enchiladas! Healthy, light and packed with flavor!

    Ingredients

    • 2 tablespoons olive oil
    • 3 cloves garlic, minced
    • ¼ cup raw walnuts, chopped
    • 1 cup uncooked quinoa, rinsed
    • 2 cups low-sodium vegetable broth
    • ¼ to ½ teaspoon fine sea salt, to taste
    • ¼ cup fresh cilantro leaves, chopped
    • 2 medium zucchini (or yellow squash), sliced lengthwise in half
    • 2 medium bell peppers (any color), seeded and quartered
    • 1 eggplant (about 1 pound), sliced into ½ inch rounds

    • 1 (15 ounce) can black beans, drained and rinsed
    • 1 (15 ounce) can red enchilada sauce (or homemade!), warmed
