    Think about the best beef stew you've ever had. For me, that's beef bourguignon. Intensify the flavor like, a kabillion times. Balance the flavors perfectly with sugar and acid.     Ingredients

    • 4 pounds oxtail, trimmed of fat
    • 6 cups port wine
    • 6 cups dry red wine
    • 4 quarts veal or chicken stock
    • 1 head garlic, halved crosswise
    • 1/2 bunch fresh thyme
    • 1 Tbls. whole black peppercorns
    • 8 Tbls. butter
    • 3 Tbls. flour
    • 4 cups carrots, peeled, trimmed, and cut into ¼-inch dice (about 1 1/2 lbs.)
    • 4 cups shallots, peeled and cut into ¼-inch dice (about 1 lb.)
    • 1 1/2 tsp. kosher salt
    • 1/2 cup white sugar
    • 1/2 cup dark brown sugar, packed
    • 1 cup red wine vinegar
    • 2 1/2 tsp. freshly cracked black pepper
