    Ingredients

    • 1 cup white whole wheat flour
    • ¼ cup oat bran
    • ½ cup all-purpose flour
    • 2 ½ teaspoons baking powder
    • ½ teaspoon sea salt
    • ¾ teaspoon ground cinnamon
    • ¼ teaspoon ground ginger
    • ¼ teaspoon ground nutmeg
    • 1 large egg
    • ? cup melted coconut oil*
    • ? cup milk (I like whole or coconut milk here)
    • ¼ cup honey
    • ¼ cup pure maple syrup
    • 1 ½ teaspoons vanilla extract
    • 1 tablespoon orange zest (from about 1 large orange)
    • ½ cup shredded carrot (from about 1 large carrot)
    • ½ cup grated apple (from about 1 medium apple)
    • ½ cup raisins (I like golden!)
    • ¼ cup unsweetened coconut flakes
    • ¼ chopped walnuts, plus extra for sprinkling on top
