Ingredients
8 cup sweet potatoes, peeled and cubed
2 large carrots, halved and chopped
1 white onion, diced
3 celery stalks, chopped
2 garlic cloves, minced
1 cup baby kale leaves
1 cup watercress leaves
1 ( 6 ounce) can tomato paste
7 cups vegetable stock
1 Tablespoon rice vinegar
¾ cup dry white wine
¼ teaspoon fresh ground black pepper
1 teaspoon turmeric
¼ teaspoon smoked paprika
¼ teaspoon nutmeg
1 tablespoon oregano
Instructions
Add all the ingredients to a large pot. Cover and heat on high to boil.
